A friend of mine, a born-and-bred Scottish lass, provided me with this golden recipe from the ruggedly beautiful place that is Orkney, an island off the north tip of Scotland. An aromatic dish, popular in China and an all-time favourite of mine, this lamb delight is ideally served at an informal supper party…and was enjoyed by five of my friends this weekend!
